Cheese Grits

Cheese Grits are cooked using chicken broth and water or milk to provide a savory base for the ground corn. Garlic powder and salt add gentle seasoning, while shredded cheddar cheese and butter stir in at the end to create a creamy, rich texture. This classic Southern side dish offers a smooth, cheesy consistency that complements various main courses.

Description

The Cheese Grits recipe calls for cooking grits, not instant or stone-ground, in a savory liquid mixture of chicken broth and water or milk, seasoned with garlic powder and salt. Gradual addition of the grits to boiling liquid and simmering uncovered for 18-20 minutes yields thick, creamy grits with a smooth texture.

Finishing the dish by stirring in shredded cheddar cheese and butter melts the cheese evenly, infusing the grits with richness and a comforting cheese flavor. Heavy cream can be added optionally for an even silkier texture.

Cheese Grits can be served as a hearty side or base for dishes like shrimp or vegetables. Leftovers keep well in the refrigerator for up to four days, making this a practical and satisfying dish for multiple meals.

Ingredients

Servings
  • 2 cups chicken broth
  • 2 cups water or milk
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • 1 cup grits not instant or stone-ground
  • 1 ½ cups cheddar cheese shredded
  • ¼ cup butter
  • heavy whipping cream optional

Instructions

  1. In a medium saucepan, bring the water, chicken broth, garlic powder, and salt to a boil over medium-high heat.
  2. While whisking, slowly add the grits and salt. Reduce the heat to low and cook uncovered for 18-20 minutes or thick and creamy (or follow the times listed on your grits package).
  3. Remove from the heat and stir in cheese and butter until melted. (Add a little bit of heavy cream if desired).

Notes

  • Use chicken broth instead of water for a richer flavor when cooking the grits.
  • If using stone-ground grits, follow package cooking times and substitute broth for water.
  • Store leftovers in the refrigerator for up to 4 days and reheat gently to maintain creaminess.
