Description
This recipe begins by blending softened cream cheese with spices such as cumin, chili powder, and garlic powder, then folding in sharp cheddar cheese to create a flavorful cheese filling. Italian sausages are sliced open vertically and each is generously stuffed with this cheese mixture. The sausages are arranged in a baking dish layered with a chipotle sauce made from fire-roasted tomatoes, chipotles in adobo, garlic powder, and Mexican oregano.
The sausages are then topped with the remaining cheddar cheese before baking at 350°F until thoroughly cooked and the cheese topping is melted and slightly browned. The chipotle-tomato sauce provides a smoky, mildly spicy backdrop and keeps the sausages moist as they bake.

Ingredients
- 5-6 Italian sausage in casings
- CHEESE MIX
- 8 ounces cream cheese softened
- 1 1/4 cup cheddar cheese divided, grated sharp
- 1 teaspoon cumin ground
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- chipotle sauce
- 14 ounce fire-roasted tomatoes diced or crushed
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Mexican oregano
- 1/2-1 teaspoon chipotles in adobo
Instructions
- In a medium bowl mix with a hand blender cream cheese, cumin, garlic powder and chili powder until well combined.
- Fold in 1 cup of cheddar cheese. Set aside.
- In a separate bowl mix together fire roasted tomatoes, garlic powder, oregano and chipotles.
- Place chipotle sauce on the bottom of a 8"X5" baking dish.
- Slice each sausage vertically and gently add about 2 tablespoons of cheese mix. Place in baking dish.
- Top sausages with remaining 1/4 cup of cheese.
- Bake at 350•F for 25 minutes or until sausage is thoroughly cooked.
Notes
- Check USDA recommended internal temperatures for cooked meats: 165 ºF for ground chicken or turkey; 160 ºF for ground pork, beef, veal, and lamb.
- About half the cheese mixture can be reserved and used to stuff jalapeños or other vegetables as an additional appetizer.
