Cheese Tortellini with Quick Tomato Sauce
Description
Cheese Tortellini with Quick Tomato Sauce features refrigerated filled pasta cooked al dente and tossed in a tomato sauce made by sautéing onions and garlic, then simmering canned diced tomatoes, water, chicken broth, and herbs like basil and oregano. A pinch of sugar balances the acidity of the tomatoes, while the addition of olive oil enriches the sauce's texture.
The tenderness of the cheese-filled tortellini pairs with the slightly chunky, fragrant tomato sauce, creating a comforting dish that is quick enough for weeknight dinners. Garnishing with Parmesan cheese and fresh parsley or basil adds an aromatic and savory finish.
This recipe yields about four 1-cup servings. It is flexible enough to use other filled pastas like ravioli or to add cooked ground meats in the sauce for extra protein. Fresh herbs sprinkled just before serving enhance flavor and presentation.
Ingredients
- 9 ounces cheese tortellini refrigerated
- 2 tablespoons olive oil divided
- ½ cup onion diced
- 4 cloves garlic minced
- ½ teaspoon basil dried
- ½ teaspoon oregano dried
- ⅓ cup water
- ¼ cup chicken broth
- 14 ounces diced tomatoes with juices, 1 can, canned
- 1 teaspoon granulated sugar
- Parmesan Cheese for garnish, optional, grated
- parsley or basil, for garnish, optional, chopped, fresh
Instructions
- Cook onion in 1 tablespoon olive oil until tender. Add garlic, basil, and oregano and stir until fragrant.
- Add tomatoes with juices, water, broth, and sugar and use a spoon to slightly smash the tomatoes.
- Bring to a boil, reduce heat to simmer. Allow sauce to simmer and thicken while cooking the tortellini, about 10 minutes. Stir in remaining olive oil and season to taste.
- Cook tortellini al dente according to package directions. Drain but do not rinse.
- Gently mix cooked tortellini with prepared tomato sauce. Top with parmesan cheese and fresh parsley or basil and serve.
Notes
- This recipe serves four 1-cup portions; double it when serving larger groups.
- Any filled pasta such as meat-filled tortellini or ravioli can substitute for cheese tortellini.
- Consider adding cooked ground beef or sausage to the sauce while it simmers for more protein.
- Sprinkle fresh herbs like basil or parsley on top just before serving for added freshness.
