Cheeseburger Pie

Cheeseburger Pie combines ground beef, mushrooms, onions, and garlic baked with a cheesy Bisquick batter topping. The mixture of savory beef with the mild tang of ketchup and Worcestershire sauce creates a classic burger flavor baked into a pie form. This dish is hearty, with melted cheese both mixed in and layered on top, providing a creamy texture that complements the meat and vegetables. It’s practical for feeding a family or for meal prepping, as the ingredients are straightforward and the baking method keeps flavors intertwined.

Description

Cheeseburger Pie is a comforting one-dish meal that blends sautéed onions, mushrooms, and garlic with browned ground beef seasoned simply with salt, ketchup, and Worcestershire sauce. The savory burger filling is placed in a pie dish and topped with a mixture of egg, milk, and Bisquick pancake mix, which bakes into a fluffy, slightly crispy crust. The addition of Colby Jack cheese both under and over the batter adds melty, mild richness. This recipe offers a texture contrast between the moist, cheesy beef base and the lightly golden batter. It’s baked until set and golden, then allowed to cool slightly before serving.

This pie works well as a main course for casual dinners and can be paired with a simple salad or steamed vegetables. It’s easily doubled for larger groups or meal prepping, making it versatile for various occasions.

The recipe suggests draining liquid from mushrooms before mixing to avoid sogginess, and small lumps in the batter are acceptable to keep the crust tender. Variations include gluten-free Bisquick or dairy-free cheese substitutions.

Ingredients

Servings
  • 1 onion white or yellow, finely diced, medium, 240g
  • 8 oz. mushrooms finely diced
  • 1 lb. ground beef 96/4, lean
  • 2-3 cloves garlic minced
  • 1/2 tsp salt
  • 1/3 cup ketchup 80g
  • 1 tsp Worcestershire sauce
  • 1/2 cup Colby jack cheese shredded, 56g
  • 1 egg large
  • 1 cup skim milk any milk, 240g
  • 3/4 cup Bisquick or any pancake mix, 90g

Instructions

  1. Preheat the oven to 400 degrees F. Spray a pie dish with cooking spray. You can also use a 8x8-inch dish or double the recipe and use a 9x13.
  2. Spray a large skillet with cooking spray. Add the onion, mushrooms, and garlic. Cook on medium heat for 3-4 minutes, or until onions and mushrooms start to soften. Drain any excess liquid (important!) then add to the pie dish.
  3. Add the ground beef the skillet and cook, breaking with a wooden spoon as you go until no longer pink, about 4-5 minutes. Stir in the salt, Worcestershire sauce, and ketchup.
  4. Transfer the beef to the pie dish and toss around with the onions and mushrooms. Sprinkle with half the cheese.
  5. In a separate bowl, whisk together the egg, milk and Bisquick. It’s ok if some small lumps remain. Pour the batter over beef mixture, stirring gently so some gets to the bottom. Top with remaining cheese.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let cool for 10-15 minutes before slicing for a cleaner cut.

Notes

  • Drain mushrooms thoroughly before mixing to prevent a watery filling.
  • Small lumps in the batter are fine; avoid overmixing to keep the crust tender.
  • Double the recipe and bake in a 9x13-inch dish for larger servings or meal prep.
  • Use gluten-free Bisquick to make the pie gluten-free and dairy-free cheeses and milk for dairy-free adaptations.
  • Consider substituting plant-based crumbled burgers to make a vegan version.
