Description
In this Cheeseburger Pie, chopped bacon is first cooked until crisp and then partially returned to the pan with ground beef and diced onions sautéed until browned and seasoned with salt, pepper, and garlic powder. The meat mixture forms the base in the pie dish, topped with shredded cheddar cheese. A batter made from Bisquick baking mix, milk, and eggs is poured over the top and baked until golden and set.
The baking creates a soft but firm crust from the batter surrounding the flavorful meat and cheese filling. Remaining bacon is used as a garnish along with classic burger toppings such as lettuce, diced tomato, and pickles, adding freshness and crunch to each serving.

Ingredients
- 6 lices Bacon chopped
- 1 pound ground beef I use 90% lean
- 1/2 cup onion finely diced
- salt to taste
- black pepper to taste
- 1/4 teaspoon garlic powder
- 1 cup cheddar cheese shredded
- 1/2 cup baking mix such as Bisquick
- 1 cup milk
- 2 egg

Instructions
- Preheat the oven to 350 degrees F. Coat a 9 inch deep dish pie pan or regular 10 inch pie pan with cooking spray.
- Place a large skillet over medium high heat. Add the bacon and cook until crisp, 4-5 minutes.
- Remove the bacon from the pan and place on a paper towel. Drain all but 1 teaspoon of bacon grease from the pan.
- Add the ground beef and onion to the pan. Cook for 6-7 minutes, breaking up the beef with a spatula.
- Stir in the salt, pepper and garlic powder and cook for 1 more minute.
- Add 2/3 of the bacon back to the pan, reserving the remaining bacon for garnish.
- Place the meat mixture in the pie plate. Sprinkle the cheese over the top.
- In a medium bowl, whisk together the Bisquick, milk and eggs. Pour the batter over the meat and cheese in the pie plate.
- Bake for 25 minutes or until pie is golden brown and a knife inserted into the center comes out clean.
- Top with remaining bacon and burger toppings such as tomatoes and lettuce.
- Cut into wedges and serve immediately.
Notes
- Use 90% lean ground beef to reduce excess grease while keeping flavor.
- If using higher-fat beef, drain excess grease after cooking to avoid soggy pie.
- A deep dish 9-inch or regular 10-inch pie pan works best to hold all batter; standard 9-inch is too small.
- Freshly grated cheese provides better melting and flavor than pre-shredded options.
