Cheesiest, Richest Mashed Potatoes
Description
The recipe starts by boiling peeled russet potatoes in salted water until very tender. After draining, the potatoes remain warm in the pot and are mashed with softened butter, cream cheese, and sour cream for creaminess and tang. Parmesan cheese folded in adds a savory depth and richness. Warm milk is gradually incorporated to achieve a fluffy, light consistency.
Seasoning with freshly ground black pepper, kosher salt, and a pinch of nutmeg adds subtle aromatic notes that enhance the cheese and dairy flavors without overwhelming. The mashed potatoes are transferred to a buttered baking dish or cast iron skillet and shaped to create peaks that brown in the oven, adding texture and a golden appearance.
Baking at 350°F for about 30 minutes forms a delicate crust while heating through evenly. The result is a rich, cheesy mashed potato casserole ideal as a comforting side dish for dinners or holiday meals.
