Description

The recipe starts by boiling peeled russet potatoes in salted water until very tender. After draining, the potatoes remain warm in the pot and are mashed with softened butter, cream cheese, and sour cream for creaminess and tang. Parmesan cheese folded in adds a savory depth and richness. Warm milk is gradually incorporated to achieve a fluffy, light consistency.

Ingredients

  • 1 1/2 pounds russet potato peeled and cut into 2-inch chunks
  • 1 1/2 teaspoons kosher salt
  • 1/4 cup butter cut into pieces, softened, unsalted
  • 4 ounces cream cheese (softened)
  • 3/4 cup Parmesan Cheese shredded
  • 1/2 cup sour cream
  • 1/2 cup milk (warmed)
  • 1/4 teaspoon black pepper freshly ground
  • pinch of nutmeg

Instructions

  1. Preheat the oven to 350°F.
  2. Add the Potatoes to a large pot with cold water covering the potatoes by at least 1 inch.
  3. Add 1 teaspoon of the salt and bring to a boil.
  4. Reduce the heat to medium and cook, partially covered until very tender, 12 to 15 minutes.
  5. The water out of the pan, keep the potatoes in.
  6. Mash the potatoes with a potatoes masher.
  7. Add the butter, cheese, cream cheese and sour cream.
  8. Mash together and add in the milk until incorporated and the Potatoes are fluffy and light.
  9. Add in 1/2 teaspoon Salt, or more to taste, and the Pepper and the Nutmeg.
  10. Butter an 8x8-inch baking dish or a cast iron skillet.
  11. Spoon the potatoes in and use a small spatula or fork to create peaks on the surface to aid browning.
  12. Dot remaining tablespoon of Butter over the potatoes.
  13. Bake for 30 minutes, or until lightly browned.
