Description
Cheesy Bacon Ranch Potato Soup starts by crisping chopped thick-cut bacon and cooking diced onions until translucent. Chunks of Yukon potatoes are added along with chicken stock and simmered until tender. Meanwhile, a roux made from butter and flour is cooked and then combined with heavy cream, kosher salt, black pepper, and ranch dressing mix to create a flavorful creamy base.
Once the potatoes are soft, the soup is blended using an immersion blender to a smooth or slightly chunky consistency depending on preference. The cream sauce and most of the bacon are stirred back in for richness and smoky flavor. Ingredients
- 8 lices Bacon chopped, thick cut
- 1 yellow onion , diced
- 1/2 cup green onions , sliced
- 2 pounds yukon potatoes , cut into chunks
- 4 cups chicken stock
- 1/4 cup butter unsalted
- 1/4 cup flour
- 1 cup heavy cream
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper coarse ground
- 1 Ranch dressing mix packet

- green onions , for garnish
- cheddar cheese , for garnish
Instructions
- Add the bacon to a large dutch oven on medium heat and cook until crisp, then remove from the pan and add in the onions cooking until translucent, about 3 minutes.
- Add the potatoes to the pan and cook for 2 minutes then add in the chicken broth and bring to a boil then lower to a simmer and cook for 15 minutes.
- In a medium saucepan add the butter and flour and whisk together until melted and smooth for 1 minute then slowly add the heavy cream, salt, pepper and ranch dressing mix while whisking until smooth.
- When the potatoes are fork tender, turn off the heat, using an immersion blender blend the soup to your desired consistency then mix in the cream sauce and bacon (reserving some bacon for the topping) and serve topped with sour cream, green onions, cheddar cheese and bacon.
