Description
This recipe prepares stuffed mini sweet peppers by first mixing cream cheese with cheddar cheese, cooked crumbled bacon, sliced green onions, garlic powder, and Worcestershire sauce until smooth. The mixture is spooned generously into pepper halves that have been cleaned of seeds and membranes. After assembling, the peppers are placed on a greased cookie sheet and topped with extra shredded cheddar.
Baking at 400 degrees Fahrenheit for 10 to 12 minutes allows the filling to melt and bubble while softening the pepper flesh without losing its shape. Ingredients
- 6 sweet pepper sliced in half, seeds and membranes removed, mini
- 4 oz cream cheese
- 2 Tablespoons green onion sliced
- 4 lices Bacon cooked and crumbled
- 1/2 teaspoon garlic powder
- 1/2 cup cheddar cheese shredded; plus extra for topping
- 1 teaspoon Worcestershire sauce
- cilantro optional, chopped for topping
Instructions
- Preheat oven to 400 degrees. Spray a cookie sheet with nonstick cooking spray and set aside.
- In a small bowl, beat together the cream cheese, green onions, bacon, garlic powder, cheddar, and worcestershire sauce with an electric mixer until smooth.
- Fill the sliced peppers with the filling, about a heaping tablespoon each. Place on prepared cookie sheet, then sprinkle each pepper with a little extra cheese. Bake in the preheated oven for 10-12 minutes until cheese is melted and bubbly and peppers have softened.
- Allow to cool slightly before eating. Sprinkle with a little chopped cilantro if desired. Enjoy!
