Ingredients
- 2 cups black beans rinsed and drained, low sodium
- 3 ounces cream cheese softened, low-fat
- 1/2 cup cottage cheese low-fat
- 1/2 lime juiced
- 1/4 cup cilantro
- 1 teaspoon cumin ground
- 1 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon kosher salt or to taste
- 4 ounces jalapeño peppers drained and chopped, canned
- 2/3 cup Colby-Jack cheese divided, shredded
- 1 jalapeno pepper sliced into thin rounds
- 1/4 cup potato chips optional, crushed, Kettle Brand Chili Lime
Instructions
- Preheat oven to 375° F.
- Add all of the ingredients up until the canned jalapeños to a food processor and purée until smooth. Scrape down the sides of the bowl as needed.
- Pulse in the chopped jalapeños and 1/3 cup shredded Colby-Jack cheese (about 3 pulses).
- Pour the mixture into a greased baking dish or skillet and top with the remaining 1/3 cup of cheese, slices of jalapeño and crushed potato chips.
- Bake for 15 minutes or until the cheese is melted and the dip is bubbly. Top with extra cilantro and serve with chips.
