Cheesy Baked Shrimp and Spinach Dip
Description
The dip starts with thawed frozen spinach squeezed to remove moisture, then combined with creamed spinach. Onions are sautéed in butter or oil until softened, followed by minced garlic added near the end to prevent burning. The shrimp cooks briefly in the pan until opaque, then the spinach and cheeses are stirred in and seasoned with salt, black pepper, and optionally red pepper flakes.
Once combined, the dip is transferred to an oven-safe dish or cast iron skillet, topped with additional cheese, and baked at 350°F until hot and bubbly. This process melts the cheese thoroughly and blends all flavors. The mixture has a creamy, cheesy texture with small shrimp pieces and tender spinach evenly distributed.
Serving options include fresh vegetable sticks, tortilla chips, or pita wedges, making it versatile for parties or casual snacks. The recipe notes that the dip can be prepared in other pans and suggests using additional easily melting cheeses for variety in the topping.
Ingredients
- 9 oz spinach thawed, frozen, chopped
- 9 oz creamed spinach thawed, frozen
- 8-10 oz Shrimp thawed if frozen
- 1 TBSP oil or butter
- ½ cup onion diced
- 2 cloves garlic smashed and minced
- ¼ tsp salt
- 8 oz havarti cheese freshly grated
- 4 oz cream cheese
- ¼ cup Parmesan Cheese freshly grated
- salt to taste
- black pepper to taste
- ⅛ tsp red pepper flakes optional
Instructions
- Pre-heat oven to 350 degrees F.
- Thaw spinach as desired. I heated mine using the microwave but you can also leave in the fridge overnight to defrost. Easy peasy!
- Squeeze frozen chopped spinach to remove excess moisture then combine with creamed spinach.
- Bring an 8-12 inch cast iron skillet to medium-high heat, then sauté onion in 1 TBSP butter or oil, adding minced garlic towards the end to prevent burning.
- Add the shrimp and sauté for a few additional minutes until the shrimp turn opaque.
- Season with salt and reduce heat to lowest setting.
- Add your spinach and cheeses (including cream cheese) and mix well.
- Re-season to taste if desired.
- Top with extra cheese if desired (a little extra cheese is always welcome around here!) then add a pinch of red pepper flakes.
- Bake for 15-20 minutes until dip is hot and bubbly.
- Serve with an assortment of veggies, tortilla chips, and/or pita wedges for dipping.
Notes
- This dip can be prepared in any pan and transferred to a baking dish if a cast iron skillet is unavailable.
- Enhance the topping by sprinkling extra freshly grated cheese such as Mozzarella, Gouda, or Gruyere before baking.
- Serve with fresh vegetables, tortilla chips, or pita wedges to accommodate different dipping preferences.
- Ensure excess moisture is squeezed from frozen spinach to prevent a watery dip.
