Cheesy Baked Shrimp Dip
Description
This recipe starts by sautéing shrimp with garlic, salt, pepper, red pepper flakes, and white wine to impart flavor and partially cook the shrimp. The shrimp are then mixed into a creamy base consisting of cream cheese, mayonnaise, mozzarella, Parmesan, lemon zest, lemon juice, and fresh parsley. Baking in a prepared dish at 350°F develops a golden, bubbly top and melds flavors.
The dip offers a combination of creamy, cheesy texture with tender shrimp accented by lemon brightness and a hint of heat from red pepper flakes. It makes for a warm appetizer or party snack served alongside various dippers.
There is a slow cooker method allowing the dip to be held warm for longer periods. The recipe can be doubled for larger gatherings using a bigger baking dish with slight adjustment in baking time. Additional cheese can be sprinkled on top before baking for added richness.
Ingredients
- 3 Tbsp olive oil
- 2 lbs. Shrimp cut into small bite-sized pieces, large, peeled, deveined
- 6 cloves garlic minced
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes
- 1/4 cup white wine dry
- 16 oz cream cheese softened
- 1/2 cup mayonnaise
- 1 1/2 cups mozzarella cheese shredded
- 1/2 cup Parmesan Cheese grated
- 2 lemon zested and juiced, plural
- 3 Tbsp parsley minced, fresh
Instructions
Prepare
- Preheat oven to 350°F. Butter an 8x8" baking dish (or spray lightly with cooking spray) and set aside.
Cook shrimp
- Add olive oil to large skillet and heat over MED heat. Add shrimp, minced garlic, salt, pepper, and red pepper flakes.
- Cook shrimp, stirring often, 3 minutes, until shrimp is almost cooked. Add wine and stir it around, letting it cook off, for 1 minute, or until wine is mostly gone.
Make dip
- Add cream cheese, mayonnaise, mozzarella, Parmesan, lemon zest and juice, and parsley to a large mixing bowl. Stir well to combine. Add the cooked shrimp and if desired, season with a pinch of additional salt and pepper.
Bake
- Transfer dip to prepared baking dish and bake in preheated oven for 30-40 minutes, until hot and bubbly.
Serve
- Serve hot, with desired dippers (crackers, slices of toasted bread, veggies, etc).
Notes
- This dip serves about 12 people; adjust quantities as needed.
- For a richer top, additional mozzarella and Parmesan cheese can be sprinkled before baking.
- To make in a slow cooker, prepare the dip, stir in cooked shrimp, and cook on low for about 2 hours until hot and bubbly.
- When doubling the recipe, use a 9x13" baking dish and increase baking time by approximately 10 minutes.
