Cheesy Beef Enchilada Bake

This cheesy beef enchilada bake is a cozy, comforting weeknight meal. Homemade enchilada sauce, ground beef, corn, green chiles, tortillas and cheese make this extra delicious. Leftovers are great too!

  • 1 pound ground beef
  • salt kosher salt
  • black pepper kosher salt
  • 2 tablespoons olive oil
  • 2 tablespoons all-purpose flour
  • 1 ½ cups chicken stock
  • 15 ounces tomato sauce
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 12 (4-inch) corn tortillas cut or torn into pieces
  • 1 (7 ounce) green chiles canned, diced
  • 1 cup corn frozen
  • 8 ounces Monterey jack cheese freshly grated
  • tomato for topping, chopped
  • green onion for topping, sliced
  • cilantro for topping, fresh

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Heat a large (12-inch) oven-safe skillet or dutch oven over medium heat and add the ground beef. Season all over with salt and pepper. Cook until browned all over, using a meat chopper or wooden spoon to break the meat into small crumbles. Once browned, transfer the meat to a plate.
  3. Now make the sauce! Add the olive oil to the same skillet over medium heat. When it’s hot, whisk in the flour and cook until it is golden brown, about 2 minutes. Add the remaining ingredients (stock, tomato sauce, paste and spice) and whisk together, bringing the mixture to a simmer. Add a big pinch of salt and pepper. Reduce the heat to low and cook for 5 more minutes. Taste and add more salt, pepper or spices as needed.
  4. To the skillet with the sauce, add in half of the tortilla pieces. Add in the ground beef, frozen corn and diced green chiles. Add a sprinkling of the cheese. Use kitchen tongs or a large spoon to mix everything together, making sure it’s all evenly dispersed.
  5. Top with the remaining tortilla pieces. Add the remaining cheese on top.
  6. Bake for 20 to 25 minutes, until warm and cheesy and bubble. Remove from the oven and top with tomatoes, cilantro and green onions. Serve!
