Cheesy Breakfast Casserole with Bacon & Eggs

This cheesy breakfast casserole layers frozen hash brown patties topped with a seasoned egg and milk mixture, cooked crispy bacon, and shredded cheddar cheese. Baking results in a set, golden-topped dish featuring a tender, creamy egg center with a hearty potato base and savory bacon flavor. The combination works well for a warming breakfast, cut into slices for easy serving.

Description

Cheesy Breakfast Casserole with Bacon & Eggs begins by layering frozen hash brown patties at the bottom of a baking dish. An egg mixture seasoned with garlic powder, onion powder, salt, and pepper is poured over the potatoes, followed by a layer of crisp cooked bacon pieces and shredded cheddar cheese on top. Baking at 350°F melts the cheese and cooks the eggs until set, forming a cohesive casserole with a slightly crisp surface and tender interior.

This casserole combines textures of crispy potatoes, creamy eggs, smoky bacon, and melted sharp cheddar cheese. It is ideal for a filling breakfast or brunch, sliced into portions and served warm. The seasoning balances the savory ingredients without overpowering them.

Ingredients

Servings
  • 4 hashbrown patties frozen
  • 5 egg
  • ¼ cup milk
  • teaspoon garlic powder
  • teaspoon onion powder
  • teaspoon salt
  • teaspoon black pepper
  • 6 lices Bacon cooked crispy and crumbled
  • 1 cup cheddar cheese shredded

Instructions

  1. Preheat oven to 350 degrees F. Coat the inside of an 8-inch x 8-inch baking dish with non-stick cooking spray.
  2. Layer the hash brown patties on the bottom of your baking dish. You will need to break one of them up to make them all fit. (see picture above)
  3. In a medium bowl, beat the eggs with the milk, onion powder, garlic powder, salt, and pepper until well combined. Pour eggs over the hash brown patties.
  4. Sprinkle cooked bacon over the eggs. Then sprinkle cheddar cheese over the bacon.
  5. Bake for 30-35 minutes, or until the top is beginning to brown and center is set. (The casserole no longer looks wet in the center.)
  6. Remove from the oven and cool on a wire rack for about 5 minutes. Cut into 6 slices and serve warm.
