Cheesy Cauliflower

Cheesy Cauliflower is a baked vegetable dish where bite-sized cauliflower florets are briefly steam-cooked, then coated in a mixture of Miracle Whip and mustard before being topped with sharp cheddar cheese and baked until melted. The dish yields tender cauliflower with a creamy, tangy coating and melted cheese crust. Optional chopped chives add freshness and color to the finished dish. This recipe delivers a comforting and flavorful side to complement various meals.

Description

To prepare Cheesy Cauliflower, cauliflower is chopped into small florets and steamed briefly with salt and pepper until just tender. Meanwhile, Miracle Whip and mustard are combined to create a tangy, creamy coating. The cooked cauliflower is mixed evenly with this mixture, then transferred to a greased baking dish. Shredded sharp cheddar cheese is sprinkled on top, seasoned with additional salt and pepper as desired.

Baking at moderate heat melts the cheese, forming a golden, bubbly layer that complements the tender cauliflower underneath. The final dish offers a balance of textures with creamy dressing, melted cheese, and mild vegetable bite. Chopped chives can be sprinkled on top after baking for a mild onion flavor and fresh appearance.

This dish works well as a side for meat or poultry mains and can be prepared ahead and reheated. The brief steaming preserves some cauliflower texture while ensuring tenderness.
