Cheesy Chicken and Rice Casserole
Description
The Cheesy Chicken and Rice Casserole combines simple pantry staples like cooked white rice and canned refried beans with fresh components such as sautéed onions and frozen charred corn. Shredded Colby jack and mozzarella cheeses are folded into the mixture and sprinkled on top to create a melted, golden crust when baked. Adding green chiles and tomatillo salsa introduces a subtle tang and mild spice, balancing the creamy texture from the beans and cheese. The cooking method involves layering the refried beans at the bottom of a skillet and baking the assembled mixture until the cheese is bubbly, resulting in a rich and hearty casserole.
This dish works well as a family dinner or a casual gathering meal. Garnishing with scallions and cilantro brings freshness and color, enhancing the overall presentation and flavor. It pairs nicely with a simple green salad or steamed vegetables for a complete meal.
