Cheesy Chicken Broccoli and Rice Casserole

This Cheesy Chicken Broccoli and Rice Casserole combines cooked chicken, broccoli florets, and rice mixed with cheddar cheese, cream of chicken soup, and mayonnaise, topped with a buttery Corn Flakes crust. Baked until hot and bubbling, the casserole offers a creamy interior filling with a crisp, golden topping that balances textures and adds a crunch. It's a hearty dish suited for casual dinners and comforting family meals.

Description

In this casserole, cooked chicken and fresh broccoli are folded into cooked rice along with shredded cheddar cheese, cream of chicken soup, and full-fat mayonnaise to create a rich, creamy base. This mixture is spread into a baking dish and covered with Corn Flakes tossed in melted butter, forming a crunchy, toasted topping once baked.

Baking at 350°F for around 30 to 35 minutes heats everything through and melds the flavors, producing a contrast between the soft, cheesy center and crisp, golden crust. The combination of broccoli and chicken provides protein and vegetable components, making it balanced and satisfying.

Serving this casserole slightly cooled allows the filling to set and makes cutting portions easier. It can be served as a main dish or paired with simple sides for a complete meal.
