Cheesy Chicken and Rice Casserole is a great family dinner that you can mix up and have in the oven in practically no time. Just 8 ingredients including chicken, cheese, rice, and broccoli, then top the casserole with buttered Corn Flakes for a delicious crunchy topping--this will be one of your new go-to dinner recipes!

Ingredients
- 2 cups fully cooked chicken (rotisserie chicken recommended) chopped
- 2 cups fresh broccoli florets cut into bite-sized pieces
- 2 cups cooked rice
- 1 can cream of chicken soup
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup mayonnaise (full-fat, not salad dressing)
- 3/4 cup corn flakes
- 2 tablespoons butter melted
Instructions
- Preheat oven to 350F.
- In a large bowl, combine the chicken, broccoli, rice, cheese, cream of chicken soup, and mayonnaise. Spread the mixture into a greased 2 or 3 quart baking dish.
- In a small bowl, toss the Corn Flakes with the melted butter, then spread over top of the casserole.
- Bake at 350F for 30-35 minutes until hot and bubbling around the edges. Cool slightly before serving.
