Cheesy Chicken Tater Tot Casserole
Description
Cheesy Chicken Tater Tot Casserole starts with layers of frozen tater tots, cooked crumbled bacon, diced chicken breast, sliced onions, shredded cheddar cheese, and a blend of seasonings. These ingredients are arranged in repeated layers in a slow cooker, then topped with half-and-half or milk to add creaminess. The dish cooks on low heat for 4-6 hours until the chicken is thoroughly cooked and tender. The slow cooking melds the flavors and softens the vegetables, while the tater tots add a crispy texture on top and around the edges.
The casserole offers a combination of textures from soft chicken and creamy cheese to crunchy tater tots and bacon bits. The use of half-and-half enriches the overall mouthfeel, making it a satisfying one-pot meal. The recipe suggests that the slow cooker temperature can vary, so checking chicken doneness is important.
This casserole pairs well with a simple green salad or steamed vegetables, which can add balance to the richness of the dish. It is an ideal option when you want a filling meal that can be set cooking ahead of time and left to finish slowly without much hands-on work.
Chicken should reach an internal temperature of 165 degrees Fahrenheit to ensure food safety. For a different twist, packaged ranch seasoning can replace the garlic powder and seasoned salt for a ranch-flavored variety.
Ingredients
- 28 ounces tater tots frozen
- 6 lices Bacon cooked and crumbled
- 1.5 pound chicken breast chopped into smaller pieces, boneless skinless
- 1 medium onion sliced
- 2 cups cheddar cheese grated
- 1 teaspoon garlic powder
- 1/2 teaspoon seasoned salt to taste
- 1/2 teaspoon black pepper cracked
- 3/4 cup half-and-half you could use milk
Instructions
- Spray the slow cooker with cooking spray.
- Layer the crockpot with 1/3 each of tots, bacon, chicken, seasonings, onion and cheese and repeat until you use all your ingredients.
- Pour the half & half or milk over the top.
- Cover, and cook on low for 4-6 hours (depends on your crockpot - mine runs hot, and the chicken was 165 degrees at the 4 hour mark).
Notes
- Ensure chicken is cooked to an internal temperature of 165°F for safety.
- Packaged ranch seasoning can be used in place of garlic powder, seasoned salt, and black pepper for a different flavor profile.
- Serve with a fresh salad or steamed vegetables to complement the richness of the casserole.
