Cheesy Corn Casserole
Description
This Cheesy Corn Casserole brings together creamed corn and drained whole kernel corn blended with whisked eggs, sour cream, melted butter, and Jiffy corn muffin mix to create a thick batter. The mixture is poured into a greased casserole dish and topped with shredded cheddar cheese. Baking covered for 50 minutes allows the casserole to set, while an uncovered finish browns the cheese and forms a slight crust.
The finished casserole has a rich, sweet corn taste balanced by the creamy, cheesy texture. The tender interior contrasts with the lightly browned, slightly crispy cheese topping. This casserole can be served warm as a hearty side dish alongside roasted meats or as part of a holiday spread.
Allow the casserole to stand for a few minutes before serving to let it settle, which helps in portioning and improves texture. It is best enjoyed fresh from the oven, maintaining the creamy and cheesy characteristics.
