Cheesy Garlic Roasted Asparagus
Description
This recipe prepares fresh asparagus by first trimming woody ends and arranging the spears on a baking sheet. They are coated with a mixture of olive oil, minced garlic, kosher salt, and cracked black pepper. Roasting at 425°F allows the asparagus to become vibrant and just tender while developing slight caramelization.
Once roasted, the asparagus is topped with shredded mozzarella cheese and returned to the oven under the broiler. This melts and browns the cheese, adding a golden, bubbling layer that contrasts the crispness of the asparagus beneath. The garlic in the oil imparts a subtle aromatic flavor throughout the dish.
Cheesy Garlic Roasted Asparagus works well as a side vegetable for a variety of meals. It pairs with roasted meats, poultry, or can be served with pasta or grain dishes for added richness and texture.
To avoid overcooking, asparagus should roast only 10-15 minutes before adding cheese. Ensure the oven is fully preheated to achieve the right tenderness without softness. Serve immediately after broiling for the best texture.
Ingredients
- 1 pound asparagus woody ends removed, spears
- 3 tablespoons olive oil
- 1 tablespoon garlic minced, or 4 cloves garlic, minced
- ¾ teaspoon kosher salt
- ¼ teaspoon black pepper cracked
- 1 ¼ cup mozzarella cheese
Instructions
- Preheat oven to 425°F (220°C). Lightly grease a baking sheet with nonstick cooking oil spray.
- Arrange asparagus on baking sheet. Set aside.
- In a small bowl mix together olive oil, garlic, salt and pepper. Drizzle the oil mixture over the asparagus and toss to evenly coat.
- Bake for 10-15 minutes until vibrant and just beginning to get tender.
- Remove from oven and top with the mozzarella cheese. Return to oven and broil (or grill) until the cheese melts and becomes golden (about 4-5 minutes).
- Adjust salt and pepper, if needed. Serve immediately.
Notes
- Roast asparagus for 10 to 15 minutes to maintain a crisp-tender texture.
- Make sure your oven is fully preheated before roasting for even cooking.
- Serve the dish promptly after broiling cheese to enjoy optimal melted texture.
