Cheesy Hash Brown Casserole with Ham
Description
The Cheesy Hash Brown Casserole with Ham brings together diced ham, sautéed onions, and bell peppers with frozen hash browns that are mixed into a creamy condensed celery soup base. Baked in a casserole dish, the cheese sprinkled atop melts into a golden crust, adding a rich texture contrast to the tender potatoes and ham inside. The sautéed vegetables add subtle sweetness and aroma while softening in the cooking process.
This dish has a layered flavor and creamy consistency with a slightly crisp cheese topping formed from the two-stage baking process. It's suited to serve as a filling breakfast or brunch option, or as a side dish accompanying eggs or a light salad for a heartier meal.
Since the recipe uses frozen hash browns, it’s convenient and quick to assemble. Covering the casserole during the initial bake ensures moisture retention, while uncovering in the last 15 minutes helps develop a lightly browned cheese crust without drying the interior.
Ingredients
- 2 tablespoons butter
- 3/4 cup onion chopped
- 1 cup bell pepper chopped
- 2 cups ham diced
- 2 pounds hash browns frozen
- 10 ounces condensed cream of celery soup
- 8 ounces cheddar cheese grated, divided use
Instructions
- Preheat the oven to 350°F and spray a 9x13-inch pan with cooking spray.
- In a large skillet, melt 2 tablespoons of butter over medium heat. Sauté the onions, bell peppers, and ham until the onions are softened and translucent.
- Combine the frozen hash browns, sautéed ham and vegetables, and condensed celery soup in a large bowl. Stir until the hash browns are coated.
- Transfer the mixture to the prepared 9x13-inch pan. Sprinkle half of the cheese over the casserole and cover it with foil. Bake for approximately 45 minutes.
- Remove the foil, add the remaining cheese, return to the oven uncovered, and cook for 15 more minutes. The cheese should begin to brown when the casserole is ready.
