Cheesy Hominy Casserole

This classic southern side dish is rich, tender, creamy, and so deliciously cheesy! It's nearly effortless to prepare, and perfect to serve at holidays and potlucks.

  • 4 14- ounce hominy drained (white or golden, canned
  • 1 cup red bell pepper diced
  • ¾ cup onion diced
  • 4 ounce diced green chiles and juices, canned
  • 8 ounces pepper jack cheese shredded
  • ½ teaspoon cumin ground
  • ¼-½ teaspoon cayenne pepper
  • 16 ounces sour cream
  • ½ cup panko breadcrumbs
  • salt
  • black pepper

Instructions

  1. Preheat the oven to 350°F. Set out a 9 x 13-inch baking dish. Spray the baking dish with nonstick cooking spray.
  2. Dump the drained hominy, diced red bell pepper, onions, green chilies, shredded pepper jack cheese, cumin, cayenne, and sour cream in the baking dish. Sprinkle with 3/4 teaspoon salt and ½ teaspoon of ground black pepper. Use a spoon to mix well to coat all the hominy in spices and sour cream.
  3. Spread the mixture out into an even layer. Use a wet paper towel to wipe the edges of the pan if needed. Sprinkle the top of the mixture with Panko breadcrumbs.
  4. Bake on the center rack for 35 to 40 minutes, until the top is golden, and the edges are bubbly. Serve warm.

Notes

  • For ease, I’ve added raw onions and bell peppers straight to the casserole dish. They will cook in the casserole. However, some people are very sensitive to onion flavor or texture. Sauteing the onions and peppers in a little bit of butter, before baking, improves their overall flavor and softens the texture. This is just a personal preference. It’s not necessary, but worth an extra minute if you have time.
