Description
This casserole starts by combining diced tomatoes with dried basil, oregano, parsley flakes, salt, pepper, olive oil, chopped onions, garlic, instant brown rice, and low-sodium chicken broth in a baking dish. Chicken breasts are placed on top and nestled into the rice mixture. Baking at 350 degrees allows the rice to absorb flavors as the chicken cooks through to an internal temperature of 165°F.
After baking, slices of provolone cheese are layered on the chicken and the casserole returns to the oven briefly to melt the cheese. Fresh parsley scattered on top before serving adds a touch of brightness and herbaceous aroma.

Ingredients
- 1 diced tomatoes 14.5 oz can, petite
- 1/4 tsp basil dried leaves
- 1/2 tsp oregano dried
- 1 tsp dried parsley flakes
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 Tbsp extra virgin olive oil
- 1/2 c. chopped yellow onion
- 3 cloves garlic minced
- 2 c. instant brown rice
- 1 c. chicken broth low sodium
- 1 lb boneless skinless chicken breasts
- provolone cheese
- parsley chopped, fresh
Instructions
- Preheat oven to 350 degrees.
- Lightly grease a 9x13 in. baking dish with cooking spray and set aside.
- Combine tomatoes, basil, oregano, parsley flakes, salt, pepper, olive oil, onion, garlic, brown rice and chicken broth in baking dish.
- Place chicken on top of rice mixture. Try to nestle the chicken in the rice mixture.
- Baked for 40 minutes or until chicken reaches an internal temp of 165F degrees.
- Remove from oven, place cheese slices on top of chicken and return to the oven for 4-5 minutes, or until cheese is melted.
- Remove from oven, sprinkle with fresh parsley and serve.
