This recipe positions half of the cheese slices on flour tortillas, topped evenly with minced jalapeño and cooked shredded chicken, then covered with the remaining cheese and tortillas.   • 8 ounces sharp cheddar cheese Sargento brand, sliced
  • 8 flour tortillas small
  • 1 jalapeño , seeded and minced
  • ½ cup chicken , cooked and shredded*
  • 3 tablespoons vegetable oil

Sides:

  • tomato salsa
  • guacamole homemade
  • sour cream
  • cilantro fresh
  • lime fresh, wedges
  • chili powder , for garnish

Instructions

  1. Place 4 flour tortillas on a clea n work space. Arrange half of the cheese slices, tearing if needed, to cover the surface area.
  2. Equally divide minced jalapeño and shredded chicken over the 4 tortillas. Top with remaining cheese slices and tortillas.
  3. Heat 1 tablespoon of vegetable oil in a medium skillet over medium heat.
  4. When hot, carefully lower your first quesadilla into the skillet using a large spatula. Cook for 1-2 minutes, or until lightly browned, then flip.
  5. Continue with remaining quesadillas.
  6. Cut into fourths and serve with sides!
