Description
This recipe positions half of the cheese slices on flour tortillas, topped evenly with minced jalapeño and cooked shredded chicken, then covered with the remaining cheese and tortillas. Cooking in vegetable oil over medium heat crisps the tortilla exterior and melts the cheese inside, creating a tender yet slightly crispy quesadilla with a mild jalapeño heat. Using pre-cooked rotisserie chicken simplifies preparation, and leftover shredded chicken can be frozen or repurposed for other dishes. Ingredients
- 8 ounces sharp cheddar cheese Sargento brand, sliced
- 8 flour tortillas small
- 1 jalapeño , seeded and minced
- ½ cup chicken , cooked and shredded*
- 3 tablespoons vegetable oil
Sides:
- tomato salsa
- guacamole homemade
- sour cream
- cilantro fresh
- lime fresh, wedges
- chili powder , for garnish
Instructions
- Place 4 flour tortillas on a clea n work space. Arrange half of the cheese slices, tearing if needed, to cover the surface area.
- Equally divide minced jalapeño and shredded chicken over the 4 tortillas. Top with remaining cheese slices and tortillas.
- Heat 1 tablespoon of vegetable oil in a medium skillet over medium heat.
- When hot, carefully lower your first quesadilla into the skillet using a large spatula. Cook for 1-2 minutes, or until lightly browned, then flip.
- Continue with remaining quesadillas.
- Cut into fourths and serve with sides!
