Cheesy Mushroom Casserole

This casserole features a sautéed mixture of baby bella mushrooms and onions seasoned with garlic, thyme, salt, and pepper, topped with shredded gruyere cheese and baked until bubbly. The mushrooms develop a savory, umami flavor, complemented by the melted cheese and herbs for a comforting side or main dish.

Description

Cheesy Mushroom Casserole starts with sautéing sliced baby bella mushrooms and onions in olive oil until the mushrooms release moisture and the mixture reduces. Garlic, black pepper, and dried thyme are added for aroma and depth. Transferred to a greased baking dish, the mixture is covered with shredded gruyere and baked until the cheese melts and the casserole is heated through. The result is a rich, tender dish combining nutritious mushrooms with the creamy, nutty flavor of gruyere cheese.

This casserole pairs well with roasted meats or can be served as a vegetarian main course. It offers a blend of textures from the soft mushrooms and melted cheese crust and can be garnished with dried parsley for color.

For variation, other cheeses like cheddar or gouda can be used. Leftovers should be cooled and stored in an airtight container in the fridge for up to four days and gently reheated at low power.

Ingredients

Servings
  • ¼ cup olive oil plus more for the pan
  • 32 ounces baby bella mushroom sliced, or crimini mushroom
  • 2 teaspoons kosher salt or 1 teaspoon of any other salt, including Morton kosher salt, Diamond Crystal brand
  • 1 cup onion chopped
  • 1 tablespoon garlic minced, fresh
  • ½ teaspoon black pepper
  • ½ teaspoon thyme dried
  • 1 cup gruyere cheese shredded
  • 1 teaspoon parsley for garnish, dried

Instructions

  1. Preheat the oven to 400°F. Grease a 2-quart baking dish with olive oil.
  2. Heat the olive oil in a large, deep skillet over medium-high heat. Add the mushrooms, onions, and kosher salt. Cook, stirring occasionally, until the mushrooms have released their liquid and the liquids have mostly evaporated, about 10 minutes.
  3. Add the garlic, black pepper, and thyme. Cook, stirring, for one more minute. Remove from heat.
  4. Transfer the mixture to the prepared baking dish. Sprinkle it with the shredded cheese.
  5. Bake the casserole until hot and bubbly, about 15 minutes. Sprinkle with parsley and serve.

Notes

  • If your baking dish is broiler-safe, you can broil the casserole for 2-3 minutes instead of baking to melt the cheese.
  • Try different cheeses such as cheddar, gouda, or provolone for altered flavor profiles.
  • Mushrooms reduce significantly when cooked; the recipe uses 32 ounces to fill a 2-quart casserole dish after cooking.
  • Brown mushrooms like baby Bella create a more appealing color compared to white mushrooms.
  • Store cooled leftovers in an airtight container in the refrigerator for up to 4 days and reheat gently in the microwave at 50% power.
