Cheesy Pork and Potato Bake

This Cheesy Pork and Potato Bake combines tender cooked Yukon Gold potatoes with browned pork chunks, sautéed onions and garlic, fresh dill, cream, and mozzarella cheese for a hearty casserole. The potatoes are parboiled to just tender, preserving their shape, while the pork is browned with soy sauce for added depth. The mixture is baked until bubbly and cheesy, resulting in a rich blend of creamy textures and savory flavors, suitable for family meals or comforting dinners.

Description

The Cheesy Pork and Potato Bake brings together Yukon Gold or russet potatoes cooked partially until fork-tender, then combined with sautéed pork pieces seasoned with soy sauce. Garlic and onion are sautéed separately to bring out their sweetness and meld into the creamy base. The dish uses heavy whipping cream and fresh dill to enrich and brighten the flavor profile. Grated mozzarella cheese sprinkled on top melts into a gooey, golden finish.

The baking step melds the components while thickening the sauce slightly, yielding a casserole featuring tender potato chunks surrounded by a flavorful, creamy sauce with bites of savory pork and aromatic herbs. The saltiness from the soy sauce and Mrs. Dash seasoning balances the creaminess and cheese. Texturally, the dish offers softness from the potatoes, slight chewiness from pork, and a creamy, cheesy coating.

This bake serves as a filling main course combining protein, starch, and dairy in one dish. It fits well for family meals and can accommodate varying portion sizes. It suits cooks looking for a warm, comforting dish with rich, layered flavors.

The recipe notes mention variability in cooking times depending on the potato and pork piece size. Preparation of ingredients ahead, like peeling and chopping potatoes and mincing garlic, is advised to streamline the cooking process.

Ingredients

Servings
  • 3 lb Yukon Gold potato or russet potato
  • 1 bay leaf
  • 1/2 Tbsp salt
  • 3 to 5 Tbsp olive oil onion and garlic, for pork
  • 1 lb of pork
  • 1 Tbsp soy sauce
  • 1 onion medium
  • 3 cloves garlic
  • 1 cup heavy whipping cream
  • 1/4 cup dill fresh
  • 1 Tbsp mrs. dash seasoning
  • 1 cup mozzarella cheese grated

Instructions

  1. Wash and peel potatoes. Cut them in to big chunks and place them in to a pot with cold water. Add 1 bay leaf and 1/2 Tbsp of salt. Cook for 15 min on medium high heat until they can be pierced with a fork, but are not fully cooked. Drain potatoes and place them in a large bowl.
  2. While potatoes are cooking, cut pork in to small chunks. Add some oil to large skillet and cook pork for 7-10 min. Half way through, add 1 Tbsp of soy sauce and mix well. Once pork starts to brown, remove from heat.
  3. Next, mince 3 cloves of garlic and saute on medium high heat until it starts to brown. Be careful not to burn it. Stir frequently. After garlic is done cooking, remove it to a separate bowl, add more olive oil and saute onion in the same skillet until it is golden brown.
  4. Start preheating oven to 350°F.
  5. In a big mixing bowl, combine cooked potatoes, onion, garlic, 1/4 cup of fresh dill, 1 cup of heavy whipping cream, 1 Tbsp of Mrs. Dash seasoning and gently mix everything together.
  6. Empty mixture into a large rectangular baking dish and top with cooked pork. Cover baking dish with foil and place in to preheated oven for 15 min.
  7. While potatoes are baking, shred 1 cup of mozzarella cheese.
  8. After 15 min are up, take potatoes out of the oven, remove foil, and sprinkle them with mozzarella cheese. Set oven to broil and put the dish back for 2 min to melt the cheese. !You are done, it goes great with canned pickled tomatoes.

Notes

  • Adjust cooking time based on the size of potato chunks and pork pieces to ensure even doneness.
  • Prepare all ingredients such as washing, peeling, and chopping potatoes, dicing pork, and mincing garlic beforehand to facilitate smooth cooking.
