Description

Cheesy Potato Casserole uses frozen hashbrowns mixed with chopped onion, cream of chicken soup, milk, sour cream, and cheddar cheese. The mixture is spread in a baking dish, covered with foil for most of baking to keep moisture in and promote even cooking. Towards the end, the foil is removed to allow the cheese topping to brown and develop some color and slight crispness.

The creamy, cheesy mixture softens the hashbrowns throughout the baking process, while the cheddar cheese adds richness and a mild tang. This casserole’s texture is tender but not mushy, with a golden cheese crust. It serves well alongside meats or as a vegetarian main if desired.

It can be assembled several days ahead and kept refrigerated until baking, making it convenient for planning meals during busy times. Leftovers store well in the fridge for almost a week and can be reheated.

  • 30 oz hashbrowns shredded, frozen
  • 1 can cream of chicken soup (10.5 oz)
  • 1 cup milk
  • ½ onion chopped
  • 2 cups cheddar cheese shredded
  • 8 oz sour cream

Instructions

  1. Preheat oven to 350 degrees F.
  2. Spray a 9x13 pan with nonstick spray.
  3. Break the frozen hash browns up in the bag.
  4. In a large bowl combine the onion, 1 cup of cheese, milk, cream of chicken soup and sour cream. Stir to combine.
  5. Mix in the hasbhrowns and stir to coat.
  6. Pour into a 9x13 pan. Top with the remaining cheese.
  7. Cover with foil and bake in the preheated oven for 45-50 minutes.
  8. Remove the foil and bake for 5-10 minutes to brown the the cheese is slightly.

Notes

  • You can prepare the casserole in advance and keep it covered in the refrigerator for 3 to 4 days before baking.
  • Leftovers should be refrigerated and are best consumed within 5 to 7 days.
