Cheesy Pull Apart Garlic Bread

Cheesy Pull Apart Garlic Bread uses an artisan sourdough loaf sliced in a crosshatch pattern filled with a garlic and Italian herb-seasoned mozzarella cheese mixture. Melted butter coats the bread before baking, resulting in a warm, soft interior with cheesy strands and a crisp, golden crust. An Italian seasoning and garlic-infused dipping sauce with balsamic vinegar and shaved cheeses complements the bread’s richness. This bread offers a tactile, pull-apart eating experience with bold savory flavors.

Description

This recipe starts with a 16-ounce sourdough artisan loaf carefully scored lengthwise and crosswise about halfway through to create a grid of squares. A mixture of freshly shredded mozzarella, crushed garlic, Italian seasoning, salt, black pepper, and optional red chili flakes is prepared and stuffed between the cuts. Butter melted to a liquid state is drizzled over the top to promote browning and moistness during baking.

The loaf is wrapped loosely in foil and baked at 350°F to melt the cheese and infuse the flavors, then briefly broiled uncovered to create bubbly cheese peaks and a golden surface. The dipping sauce combines olive oil, balsamic vinegar, crushed garlic, Italian seasoning, salt, chili flakes, Asiago, and Parmesan cheeses for tang, heat, and umami balance when paired with the rich bread.

Served warm, the bread pulls apart easily along the cuts, offering strands of melted mozzarella combined with the herbal garlic butter taste. This is a snack or side suitable for sharing during casual meals.

The recipe allows for substituting different cheeses inside the loaf, such as cheddar or Brie, though mozzarella is preferred for its stringiness. The dipping sauce adds a tangy, flavorful contrast to the rich, buttery bread.

Ingredients

Servings

For the bread

  • 1 (16 oz.) sourdough bread artisan loaf
  • 3 cups mozzarella cheese freshly grated
  • 2 Tbsp. garlic crushed
  • 1 Tbsp. Italian seasoning
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1 tsp. red pepper chili flakes optional
  • 8 Tbsp. butter unsalted, melted (1 stick

For the dipping sauce

  • 1/2 cup olive oil
  • 1/3 cup balsamic vinegar
  • 1 tsp. garlic crushed
  • 1 tsp. Italian seasoning
  • 1 tsp. salt
  • 1 tsp. red pepper chili flakes optional
  • 1/3 cup Asiago cheese shredded
  • 1/3 cup Parmesan Cheese shredded

Instructions

  1. Preheat oven to 350°F. In a medium sized bowl, mix the shredded mozzarella cheese with the garlic, Italian seasoning, salt, pepper and red pepper chili flakes. Set aside.
  2. Using a bread knife, carefully cut the bread in strips in one direction, rotate the bread and cut in the other direction. Only cut about half way down the bread, not all the way!
  3. Melt the butter in a microwave safe bowl for ~30 seconds or until completely melted. Stuff the cheese mixture in between all the crevices of the bread. Drizzle the melted butter all over the top.
  4. Place the bread on a baking sheet lined with foil. Loosely cover with foil and bake for 20 minutes. Remove the foil and broil for 2-3 minutes or until cheese is bubbling.
  5. While the bread is in the oven, whisk all of the ingredients for the dipping sauce together in a small bowl.
  6. Serve with the bread. Pull-apart, dunk and enjoy!

Notes

  • Mozzarella provides the signature stringy cheese texture; however, adding other cheeses like cheddar, Brie, or blue cheese can diversify flavor.
