Every good Midwesterner has a recipe for cheesy potatoes when a comforting side dish is needed; these easy Cheesy Ranch Potatoes with Frozen Hash Browns includes Ranch seasoning for a delicious twist on this wintertime staple.

  • 1 ounce package hash browns frozen
  • ½ cup butter (1 stick)
  • 1 .5 ounce can cream of chicken soup
  • 1 pint sour cream
  • ½ cup milk 2%
  • ½ cup yellow onion diced
  • 2 cups cheddar cheese grated
  • 2 cups pepper jack cheese grated
  • 1 package ranch seasoning Hidden Valley brand
  • 1 ounce package croutons garlic and butter flavored
  • 1-2 jalapeño optional, finely diced

Instructions

  1. Layering is the key to success for these super awesome ranch cheesy potatoes.
  2. Preheat oven to 350 degrees Fahrenheit.
  3. In a bowl, combine cream of chicken soup, sour cream, milk, Hidden Valley Ranch seasoning packet, diced onion, and diced jalapeno (optional). Mix to combine.
  4. Melt ½ cup butter in a small pan over low heat and pour it into a 9x13 pan.
  5. Add half a package of frozen hash browns to the pan, spreading evenly. 
  6. Pour half of the wet mixture over the frozen hash browns and use a spatula to evenly layer. 
  7. Next, sprinkle 2 cups of shredded cheese evenly over the top of this layer.
  8. Add remaining half of frozen hash browns.
  9. Add remaining half of the wet mixture, using a spatula to spread evenly.
  10. Sprinkle the remaining 2 cups of cheese over the top of that layer.
  11. Crush up the package of croutons and sprinkle them evenly over the top of the cheese. 
  12. Bake for 45 minutes, uncovered. 
  13. Remove from oven and let sit for 5 minutes before serving.

  • These Cheesy Potatoes can be prepared a day in advance, but you'll want to wait to add the crushed crouton topping until right before you're ready to bake it. Prepare the casserole as instructed, then store covered in the refrigerator until you're ready to make it.
  • If you'd rather this dish not have any spice, feel free to leave out the jalapeno.
