Cheesy Refried Bean Dip
Description
Cheesy Refried Bean Dip combines canned refried beans with creamy sour cream, warmed in bacon grease or preferred fat, and spiced with hot sauce for heat and flavor. The mixture is stirred over medium heat until blended and warm. For smoothness, the beans can be pureed before adding Velveeta cheese, which melts into the warm bean mixture creating a creamy, cheesy consistency. This results in a dip where both the beans and cheese are distinct but harmonious.
The dip’s texture ranges from slightly chunky to smooth depending on blending preference. The hot sauce adds a gentle kick without overwhelming the other flavors, while the bacon grease introduces savory depth. Served warm, it pairs well with tortilla chips as an appetizer or snack.
The recipe notes emphasize the recommended cheese quantity of 8 ounces for balance, allowing both bean and cheese flavors to come through. It also discusses the variety of canned refried bean textures and the choice to blend for smoothness or keep a bit of texture depending on preference, providing flexibility to the cook.
Ingredients
- 1 ounce refried beans canned
- ¼ cup sour cream
- 1 tablespoon bacon grease (or butter or olive oil)
- 1 tablespoon hot sauce (I used Cholula)
- 8 ounces Velveeta cheese
Instructions
- Add the canned refried beans, sour cream, bacon fat, and hot sauce to a small pot over medium heat. Stir until combined, then keep stirring frequently as the refried beans continue to warm up.
- Note: If you’d like super smooth beans, take a moment to blend with an immersion blender. Or add to a blender and blend until smooth and creamy.
- Once heated through, add the Velveeta cheese. Keep stirring frequently, until the cheese has completely melted.
- Remove from heat and serve with tortilla chips.
Notes
- Use about 8 ounces of Velveeta cheese for a balanced flavor between beans and cheese, though amounts can be adjusted to taste.
- Choose canned refried beans with a texture you prefer; smooth is recommended for creaminess, but chunkier beans add texture.
- For a super smooth dip, blend the warmed bean mixture before adding cheese, otherwise leave some texture as desired.
