Cheesy Roasted Asparagus

Cheesy Roasted Asparagus features crisp-tender asparagus spears roasted with thinly sliced red onions and topped with melted mozzarella cheese. The olive oil and seasoning create a savory base that complements the mild, creamy cheese. Baking then broiling allows melting or browning of the cheese for texture variation. It makes a warm vegetable side with a satisfying cheesy topping.

Description

Cheesy Roasted Asparagus combines fresh asparagus and sliced red onion tossed in olive oil, kosher salt, and freshly ground black pepper, then roasted at high temperature until tender yet still crisp. After roasting, shredded mozzarella cheese is sprinkled over the middle section of the asparagus and returned to the oven to melt or be lightly browned using the broiler, enhancing the dish with a creamy, golden layer. This roasting and broiling sequence creates a contrast between tender vegetables and melted cheese, perfect as a side dish to complement a main meal.

The asparagus retains a slight snap, while the red onion adds sweetness and depth. The cheese layer softens to a smooth texture or browns for a crispier topping depending on the finishing method. Simple seasonings allow the natural flavors of the vegetables and cheese to stand out.

Serve this dish warm and fresh for the best texture and flavor balance. It pairs well with grilled or roasted proteins or can be enjoyed as a cheesy vegetable side on its own.

Ingredients

Servings
  • asparagus trimmed, one bunch
  • ½ red onion sliced vertically into thin strips, medium
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper freshly ground
  • 1 ½ cup mozzarella cheese shredded

Instructions

  1. Preheat oven to 425F. Line a baking sheet with foil for easier cleanup.
  2. Add the asparagus and onions to the baking sheet, evenly drizzle with olive oil, evenly sprinkle with salt and pepper, and use your hands to toss to coat evenly.
  3. Bake for about 12 to 15 minutes, or until asparagus is crisp-tender.
  4. Remove baking sheet from the oven, evenly sprinkle the cheese over middle section of the asparagus, and return the baking sheet to the oven for about 5 minutes, or until cheese has melted.
  5. Alternatively, place the baking sheet under the broiler on high for about 3 to 4 minutes if you prefer your cheese to be more golden browned rather than simply just melted. If you’re using the broiler, keep a very close eye on things since food can burn very quickly under the broiler.
  6. Recipe is best warm and fresh.
