  • 1 lb pork sausage I like to use Tennessee Pride brand, but use your favorite
  • 10 oz can diced tomatoes UNdrained, Rotel brand
  • 10 oz can green chiles UNdrained, Rotel brand
  • 16 oz package Velveeta cheese cut into 1/2" cubes
  • 1/2 cup diced yellow onion
  • 2 cloves garlic minced
  • 1/2 tsp black pepper

Instructions

Brown sausage and cook vegetables

  1. Heat a large skillet over MED heat. Add the sausage and cook, breaking it into crumbles as it cooks. About halfway through the sausage cooking, add onion and garlic and stir together.
  2. Continue cooking, until sausage is cooked through and the onion is translucent. Drain well, then return to the skillet.

Assemble

  1. To the skillet with the sausage, onion, and garlic, add the undrained rotel, cubed velveeta cheese, and black pepper.

Cook

  1. Turn the heat down to LOW and continue to cook, stirring often, until the cheese is melted, and everything is well combined.

Serve

  1. Serve hot, with some chips or vegetables as dippers. Feel free to garnish with some diced green onions or fresh cilantro if you'd like.

Notes

  • This recipe serves approximately 12 people, making it suitable for gatherings.
