Cheesy Sausage Potato Casserole

This easy sausage potato casserole is loaded with seasoned sausage, tender potatoes, loads of cheese, onions, and more. It's an easy to make, one pot dish that makes a rich, hearty meal everyone will love.

Ingredients
- 1 pound ground sausage honey garlic or italian, casings removed or ½ inch slices
- 1 can (10 ¾ oz) condensed cream soup tomato, celery or mushroom soup, undiluted
- ½ cup milk
- 3-4 large potatoes peeled and sliced
- 1 large onion sliced
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 cups cheese shredded, use more or less as desired
Options (choose 1 vegetable)
- 1 cup peas canned, drained
- 1 cup corn canned, drained
- 1 cup beans canned, drained
- green onions thinly sliced, optional for serving

Instructions
- Set aside an un-greased 13 x 9 inch pan.
- In a large skillet, cook your sausage (or whichever ground meat you are using) over medium heat until no longer pink. Drain if necessary and set aside.
- In a large bowl, combine the soup, milk, onion, optional vegetable (if using) salt and pepper.
- Add your cooked ground meat and potato slices to your bowl and stir until the potatoes are coated and the meat is evenly distributed.
- Dump into pan. Cover with tinfoil and bake at 350 degrees for 1-½ hours or until potatoes are fork tender. I find that the cooking time will depend on which kind of potatoes you use. Just poke the casserole with a fork and if it goes in easily your potatoes are done and the casserole is almost ready!
- Uncover, sprinkle with cheese and broil for 5 minutes or until cheese is melted and brown. Let stand for at least 5 minutes before serving. Enjoy!
Notes
- Gently mix the potatoes and sausage into the cream soup mixture. You don't want to break the potatoes.
- Slice the potatoes a bit on the thicker side so they retain a nice texture while cooking.
- Be sure you drain your cooked sausage before adding it to the casserole so it doesn't get greasy.
