Cheesy Sausage Spinach Breakfast Casserole
Description
Cheesy Sausage Spinach Breakfast Casserole uses flavorful herb stuffing mix as a base combined with cooked breakfast sausage, chopped scallions, minced garlic, and squeezed-dry spinach. The mixture is layered in a baking dish with shredded Monterey Jack cheese and topped with a custard made from eggs and half-and-half. Baking at 400°F until set, then sprinkled with Parmesan cheese and baked until bubbly, results in a creamy, savory casserole featuring layers of herbaceous stuffing, sausage, and spinach. The garlic and scallions add aromatic depth while the cheese contributes a smooth and gooey texture throughout.
The bake offers a mildly dense texture balanced with the richness of the eggs and dairy, making it filling and flavorful without being dry. It’s suited for breakfast or brunch and can be served in squares alongside a simple fruit salad or fresh coffee for a complete morning meal.
This recipe can be prepared in advance and baked just before serving. Letting the casserole rest for 10 minutes after baking allows it to firm up for easier slicing. Using frozen spinach that’s thoroughly drained helps prevent excess moisture.
Ingredients
- 6 ounces stuffing mix herb-flavored, packaged
- 1 pound breakfast sausage bulk
- ¼ cup scallions chopped
- 1 clove garlic minced
- 10 ounces spinach thawed and squeezed dry, frozen, chopped
- 8 ounces Monterey jack cheese shredded
- 1½ cups half-and-half
- 3 egg
- 2 tablespoons Parmesan Cheese grated
Instructions
- Preheat oven to 400 degrees F. Grease a 9x13-inch baking dish; set aside.
- Prepare the stuffing according to package directions; set aside.
- Cook the sausage over medium heat in a large skillet, breaking it up as it cooks. Add the scallions and cook until the meat is no longer pink. Add the garlic and cook for another minute, or until the garlic is fragrant. Drain any fat from the pan.
- Add the prepared stuffing and the spinach to the skillet with the sausage and mix together until thoroughly combined. Transfer to the prepared baking dish and sprinkle with the Monterey Jack cheese.
- In a small bowl, whisk together the half-and-half and eggs and pour evenly over sausage mixture. Rap the dish against the counter once or twice to make sure the liquid is evenly distributed.
- Bake for 30 minutes, or until a thermometer inserted in the center reads 160 degrees F. Sprinkle with Parmesan cheese and bake for 5 more minutes, or until bubbly. Let sit for 10 minutes before serving.
Notes
- Ensure the frozen spinach is fully thawed and squeezed dry to avoid a soggy casserole.
- Rest the casserole for 10 minutes after baking to let it set for easier cutting.
