This dish consists of thin slices of Russet or Yukon Gold potatoes arranged in a baking dish with layers of a creamy cheese sauce. The sauce is prepared by making a roux from butter and flour, infusing it with minced garlic, then whisking in chicken broth and milk until smooth and thickened. Sharp cheddar cheese melts into the sauce providing a bold flavor.

The casserole is baked uncovered at 350°F for about an hour until the potatoes become fork tender. The finishing step involves broiling for 3-5 minutes to develop a slightly browned and textured cheese crust. After baking, resting briefly helps the sauce thicken for easier serving.

  • 3 lbs potato thinly sliced (1/8 inch thick) (Russet or Yukon Gold
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups milk 2% or whole milk
  • 1 cup chicken broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 Tbsp garlic minced
  • 2 cups cheddar cheese shredded, sharp

Instructions

  1. Preheat the oven to 350 degrees F and spray a 9X13 baking dish with a non stick cooking spray.
  2. Melt the butter in a small sauce pan and then whisk in the flour and the minced garlic.
  3. Whisk in the chicken broth and then gradually add in the milk and whisk constantly until well combined and smooth.  Then stir in the salt and pepper.
  4. Cook on low until the sauce is smooth (whisking constantly).
  5. Turn the heat off and then stir in the shredded cheddar cheese. Stir until the cheese is melted and well combined.
  6. Then place half of the potatoes in the baking dish.  Pour half of the cheese sauce on top of the layer of the potatoes in the pan.  Repeat with the remaining potatoes and cheese sauce.
  7. Bake uncovered for 55-70 minutes at 350 degrees F until the potatoes are fork tender.
  8. Switch the oven to the broil setting and broil for 3-5 minutes until the top of the scalloped potatoes are browned slightly.
  9. Remove and let the potatoes set at room temperature for 15-20 minutes before serving.
  10. Serve warm and enjoy!
