Cheesy Taco Rice

Cheesy Taco Rice combines ground beef with diced onion and bell peppers, simmered alongside tomatoes with green chilis, salsa, and a blend of spices. Long-grain white rice cooks in beef stock and water until tender, and shredded cheese is stirred in at the end to melt through the mixture, creating a creamy, flavorful dish. The combination of cumin, chili powder, and smoked paprika gives the rice a warm, slightly smoky taste, while the cheese adds richness. This one-pan meal works well for a simple dinner or casual gathering, garnished with green onions for a fresh finish.

Description

Cheesy Taco Rice starts with browning ground beef with diced onions and bell peppers to build a savory base. The inclusion of canned diced tomatoes with green chilis and salsa introduces a tangy, mildly spicy element. Cooking the rice directly in beef stock and water allows it to absorb the flavors fully, while a combination of spices including cumin, cayenne pepper, chili powder, garlic powder, and smoked paprika intensify the dish's Mexican-inspired profile. Once the rice is tender and the liquid absorbed, shredding cheese into the mixture provides a creamy texture and melded flavors throughout. Topping with green onions gives a mild, crisp contrast. This dish delivers a satisfying, hearty meal with balanced textures and familiar warming spices, ideal for straightforward home cooking.
