Cheesy Tater Tot Casserole
Description
The recipe starts by browning ground beef with diced onion and mushrooms, creating a savory filling. Flour is added to coat the meat and form a roux, then milk and beef bouillon thicken the mixture into a creamy gravy. Green beans can be stirred in optionally for added texture.
The casserole is assembled by spreading the beef mixture in a baking dish, covered with an even layer of frozen tater tots. Baking crisps the tots to a golden exterior while heating through the filling. A layer of shredded cheddar melts over the top in the final minutes, adding richness and flavor.
Served hot, the casserole combines creamy, meaty sauce with crispy tater tots and melted cheese, making it a filling main course. Leftovers can be refrigerated or frozen, reheated in the microwave or oven, restoring the crispy texture by broiling if desired.
Ingredients
- 1 onion diced
- 1 1/2 pounds ground beef
- 1 cup mushrooms coarsely chopped
- 1/3 cup flour (or 3 tablespoons cornstarch)
- 2 cups milk
- 2 tablespoons beef bouillon
- kosher salt to taste
- black pepper to taste, ground
- 1 (12-14 ounce) can green beans drained, optional, cut
- 1 (12-16 ounce) package tater tots frozen
- 2 cups cheddar cheese shredded
Instructions
- Preheat oven to 375-degrees. In a large skillet over medium heat, cook onion and ground beef until beef JUST browned. Add mushrooms and cook until beef is cooked through and onion is translucent. Drain excess grease.
- Sprinkle flour over beef/mushroom mixture and stir until flour coats the beef.
- Slowly stir in the milk, stirring constantly until you reach your desired thickness (you want the sauce to have the consistency of a thick gravy). You may or may not need all the milk.
- Season with beef bouillon and salt and pepper to taste. Stir in green beans (optional).
- Spray a 9x13 baking dish with cooking spray and pour beef mixture into the bottom of the dish, spreading evenly.
- Evenly layer tater tots over the beef mixture.
- Bake for 35-40 minutes or until tater tots become golden brown and crispy.
- Remove from oven, top with cheese, and bake an additional 5 minutes.
- Serve immediately while hot.
Notes
- Homemade condensed cream of mushroom soup can substitute canned for better control of ingredients.
- Store leftovers airtight in the fridge for up to 5 days and reheat thoroughly before serving.
- Frozen casserole can be thawed in the refrigerator, then baked as directed to retain texture.
- Reheat in the microwave or under the broiler to crisp tater tots again after storage.
- The casserole often tastes better the next day as flavors meld and the texture firms up.
