Description
This recipe uses a mixture of cream cheese and Greek yogurt combined with ranch dip seasoning, crumbled bacon bits, and chopped spinach to create a flavorful, creamy spread. The filling is evenly spread on soft tortilla shells, topped with turkey slices and bacon cheddar cheese.
The tortillas are rolled tightly to hold the filling, wrapped in plastic, and refrigerated for a couple of hours so the mixture firms up. After chilling, the roll is sliced into 1-inch pinwheels revealing colorful layers.
The pinwheels provide a combination of creamy texture from the cheese mixture, smoky bacon flavor, and the chewiness of turkey and cheese. They are convenient for serving as finger foods at parties or quick snacks.
Ingredients
- 1 cream cheese 8 oz package, softened
- 1/2 c. Greek yogurt
- 1 Tbsp ranch dip mix
- 1 bacon bits 3 oz package
- 2 c. spinach chopped
- 10 lices turkey
- 10 lices bacon cheddar cheese Crystal Farms® brand
- 5 tortilla shells soft shell
Instructions
- In a mixing bowl cream together cream cheese and Greek yogurt. Add ranch dip mix, bacon bits, and spinach. Mix until combined.
- Evenly divide mixture between soft shells, spread evenly over each tortilla. Place two slices of turkey on each tortilla. Top with two slices of cheese.
- Roll the tortilla up gently, yet tightly to make sure it holds together and keeps its shape. Wrap in plastic wrap. Place in fridge two hours to firm up the cream cheese mixture, so it's easier to cut.
- Cut off ends of tortilla roll and cut into 1-inch slices.
- Store in airtight container or serve immediately.
