“Cheesy” Vegan Roasted Cauliflower

Roasted cauliflower florets coated with olive oil, nutritional yeast, and spices like paprika and cayenne yield a savory vegan side dish with cheesy, smoky notes. The roasting develops crisp golden edges while keeping the centers tender. This flavorful preparation enhances simple cauliflower with a cheesy umami twist using nutritional yeast.

Description

“Cheesy” Vegan Roasted Cauliflower features chopped cauliflower tossed with olive oil and a seasoning blend of nutritional yeast, salt, paprika, and a pinch of cayenne for optional heat. Nutritional yeast imparts a naturally cheesy flavor without dairy, complementing the spices. Roasting at a high temperature allows the cauliflower to develop browning on the edges while softening inside, creating a satisfying texture contrast.

The dish combines a mild smoky warmth from paprika with the cheesy umami of yeast and slight heat from cayenne if used. It can be served as a flavorful vegetable side alongside main courses or enhanced with nuts like pistachios or walnuts for crunch and additional flavor.

Ingredients

Servings
  • 1 large cauliflower chopped into florets, head
  • 3 Tbsp olive oil
  • 3 Tbsp nutritional yeast
  • ½ tsp salt to taste, sea salt
  • ½ tsp paprika
  • Pinch cayenne pepper optional

Instructions

  1. Preheat the oven to 415 degrees F and line a large baking sheet with parchment paper.
  2. Add the raw cauliflower to a large mixing bowl. Drizzle with olive oil, and sprinkle with nutritional yeast, sea salt, paprika, and cayenne pepper. Use your hands to toss and mix everything together until the cauliflower florets are well-coated.
  3. Spread the cauliflower over the prepared baking sheet and roast on the center rack for 30 to 40 minutes, stirring half-way through, or until cauliflower is golden-brown and tender.
  4. Remove from the oven and taste cauliflower for flavor. Sprinkle with sea salt and additional nutritional yeast if desired. Serve with chopped pistachios, pine nuts, walnuts, or pecans alongside your favorite entree.
