Description
The casserole begins by tossing sautéed or raw chopped onion, assorted bell peppers, and broccoli florets with half the shredded cheddar cheese in a prepared baking dish. A mixture of eggs, ground mustard, half and half, and whole wheat or white flour is whisked together and poured over the vegetable and cheese base. Ingredients
- 1/2 yellow onion chopped, medium
- 1 cup bell pepper chopped, assorted
- 1 cup broccoli florets only, chopped
- 2 cups cheddar cheese shredded, divided (I used 1/2 white cheddar)
- 10 egg
- 1/2 teaspoon ground mustard
- 1/2 cup half and half
- 1/4 cup whole wheat flour or white flour

Instructions
- Heat oven to 350 degrees. Coat 9x13 baking dish with cooking spray.
- Toss onion, bell peppers, broccoli and 1 cup cheese into cooking dish, spreading evenly.
- In a medium mixing bowl, whisk eggs, ground mustard, half and half and whole wheat flour. Pour mixture over vegetables and cheese.
- Bake uncovered for 45 minutes. Remove and top with remaining 1 cup cheese. Return to oven for 10 minutes.
