Cheesy Vegetable Chowder

Ingredients

  • 2 tablespoons butter
  • 1/2 cup celery diced
  • 1/2 cup onion diced
  • 1/2 cup carrot diced
  • 1 cup broccoli
  • 2 cups chicken broth or vegetable broth
  • 1/2 cup butter
  • 2/3 cup flour
  • 4 cups milk
  • 8 oz. cheddar cheese shredded

Instructions

  1. In a large soup pot over medium heat, melt the butter. Add the celery, onion and carrot.
  2. Cook until softened, 5-7 minutes. Add in the broccoli and the chicken broth and cook over medium heat for 10 minutes.
  3. Meanwhile, in another pan, melt the 1/2 cup butter. Whisk in the flour and cook for 1 minute. Whisk in the milk slowly. Cook until thickened, about 8 minutes. Stir into the vegetable mixture.
  4. Stir in the shredded cheddar cheese and cook until melted.
