Cherry Balsamic Sauce

This Cherry Balsamic Sauce blends coarsely chopped pitted cherries with balsamic vinegar, sugar, and water, simmered gently to reduce and thicken into a pouring sauce. A pinch of kosher salt is added near the end to balance the sweetness and acidity. The sauce is smooth and slightly runny, ideal for drizzling over dishes where a fruity tang is desired.

Description

The Cherry Balsamic Sauce starts by combining balsamic vinegar, sugar, cherries, and water, which gently simmer for 20-30 minutes. This slow simmering concentrates the flavors and reduces the liquid to a sauce consistency. The sauce retains some fluidity instead of thickening to syrup, which lets it drizzle easily.

A small amount of kosher salt is stirred in at the end to enhance flavor depth and balance the tartness from the vinegar and natural sweetness from the cherries. The sauce can be used warm or cooled, providing a fruity and tangy complement to foods.

This sauce suits use as a topping for meats, cheeses, or desserts that pair well with cherries and balsamic vinegar. Its smooth texture can be refined by blending if desired for a uniform pour.

For a smoother texture, you can process the sauce in an immersion blender or strain through a fine mesh sieve. This helps remove cherry chunks if a uniform sauce is preferred.

Ingredients

Servings
  • 1 cup balsamic vinegar
  • 1 tablespoon sugar
  • 1/4 cup water
  • 1 cup Cherry pitted and coarsely chopped
  • pinch kosher salt coarse

Instructions

  1. In a small saucepan, combine balsamic vinegar, sugar, cherries and water. Bring to a low simmer.
  2. Simmer for 20-30 minutes, stirring occasionally to prevent burning.
  3. When sauce has reduced, remove from heat and stir in a pinch of coarse Kosher salt. Sauce won't be the texture of syrup yet- it will still be a little runny, that is normal.
  4. Set aside to cool and thicken.
  5. When cooled, feel free to use!
