Description
This compote starts with cleaned and pitted Bing cherries cooked slowly in a saucepan with a small amount of water and sweetener if desired. As the mixture simmers over low heat, the cherries break down and release their juices, creating a thick, syrupy consistency. Almond extract is added near the end to impart a delicate nutty aroma.
The texture is a mixture of softened whole or partially broken cherries suspended in a lightly thickened syrup, making it suitable as a topping for pancakes, yogurt, ice cream, or desserts. The sweetness level can be adjusted or omitted depending on the natural ripeness of the cherries used.
The compote can be cooled and stored in a covered container in the refrigerator. Enjoy it warm for a comforting addition or chilled as a fresh fruit sauce.
Ingredients
- 1 pound bing cherries cleaned and pitted
- 2 Tablespoons Monk Fruit Sweetener granulated sweetener like
- 2 tablespoons water
- 1/2 teaspoon almond extract
Instructions
- Wash cherries, remove stems and pits.
- Place prepared cherries in a saucepan.
- Add sweetener and water. Simmer over low heat.
- Continue to stir until the fruit begins to produce natural fruit juice as well as soften. This will take up to 20 minutes.
- Remove from heat and add almond extract.
- Cool before placing in a container with a cover.
- Enjoy warm or cold.

- Sweetener is optional; adjust or omit based on cherry sweetness.
- Use fresh or thawed Bing cherries for best flavor and texture.
