Description

This Cherry Cranberry Relish starts by dissolving cherry flavored gelatin in boiling water. Fresh or thawed cranberries, orange zest and segments, sugar, chopped celery, and chopped pecans and walnuts are pulsed briefly in a food processor to combine while maintaining some chunkiness. The fruit and nut mixture is then blended into the dissolved gelatin before refrigeration.

The relish is chilled until set, with a stir after an hour to ensure even texture. The final dish provides a balance of tartness from the cranberries and orange, sweetness from the gelatin and sugar, and a crunch from the nuts and celery. This contrast makes it an interesting complement to savory proteins.

Ingredients

  • 6 oz cherry gelatin mix
  • 2 cups water boiling
  • 12 oz cranberries (fresh or thawed)
  • 1 orange zest and segments, medium
  • 1 cup sugar
  • 2 talks celery chopped
  • 1/2 cup pecans
  • 1/2 cup walnuts

Instructions

  1. Dissolve jello in hot water, right in the pan. I use a glass 8x 8", and stir completely until clear.
  2. Pulse the cranberries, orange segments, zest, sugar, celery and nuts several times in a food processor. Keep in mind this can be left chunky, but small. Do not over process until smooth!
  3. Pour mixture into liquid jello pan and stir to mix thoroughly.
  4. Cover with plastic wrap and refrigerate. After 1 hour stir the jello to mix it up, recover and refrigerate until set. Stir thoroughly to break it up prior to serving.

Serving

  1. This is a fantastic side for any Thanksgiving table with turkey, you can also serve with chicken and I even have this for breakfast over cottage cheese or yogurt.
