Cherry Muffins

Easy Cherry Muffins recipe for sweet tender muffins with fresh cherries, hint of almond flavor, and bakery-made texture. Ready in about 30 minutes!

Ingredients

  • 1/2 cup butter softened, unsalted
  • 1 1/4 cups sugar
  • 2 large egg
  • 1 teaspoon almond extract
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 2 teaspoons baking powder
  • 1/2 cup milk whole
  • 2 cups Cherry cut into quarters, pitted
  • 2 tablespoons flour (for tossing with cherries)

Instructions

  1. Preheat the oven to 375. Line a 12 cup muffin tin with cupcake liners.
  2. Add butter to a stand mixer on medium speed and cream until fluffy.
  3. Add in sugar and beat until fluffy, another 1 minute.
  4. Add in eggs and vanilla extract and beat until well combined, 30 seconds.
  5. Sift together flour, salt and baking powder.
  6. Add in dry ingredients on low speed until just combined.
  7. Add in milk on low speed until just combined.
  8. Dry the cherry pieces with paper towels.
  9. Toss cherries with 2 tablespoons flour and fold them into the batter gently.
  10. Use an ice cream scoop to add muffin batter to the lined muffin tin.
  11. Bake for 20-22 minutes or until a toothpick comes out clean.
