Chex Scotcheroos

Easy, delicious, no-bake treat that combines crunchy cereal, sweet peanut butter, and a chocolate-butterscotch topping. It’s a take on the classic Scotcheroos recipe, but we’re swapping out the usual Rice Krispies cereal for Rice Chex.

Ingredients

  • 1 cup light corn syrup
  • 3/4 cup sugar
  • 1 1/4 cup creamy peanut butter (Jif or Skippy's)
  • 1 teaspoon vanilla extract
  • 5 to 5 1/2 cups rice chex cereal

Chocolate Butterscotch Topping:

  • 1 cup butterscotch chips
  • 1 1/2 cups semi-sweet chocolate chips

Instructions

  1. Line 1-2 baking sheets with parchment paper, silpat silicone sheets, or spray with non-stick cooking spray. Set aside.
  2. Heat a saucepan over medium-low heat. Add sugar and corn syrup. Stir until dissolved. Do NOT let this mixture come to a boil so watch carefully. This should only take 3-4 minutes, maximum. Once the sugar is dissolved, remove from the heat, add the peanut butter and vanilla extract, and stir until combined.
  3. Fold in the Rice Chex cereal and stir well to coat, being careful not to break the Rice Chex cereal too much. Simply scoop or spoon small portions onto the prepared baking sheet. Carefully press the mixture together.
  4. In a microwave-safe bowl, heat chocolate chips and butterscotch chips at 50% power in 30-second increments. Stir after each increment. This may take about 2 minutes. Do not overcook or it may burn the chocolate.
  5. Generously drizzle the chocolate over each piece. Let the treats set up at room temperature or chill briefly in the refrigerator until the topping is firm. Cover and store in an air-tight container at room temperature.

Notes

  • If you love butterscotch, you can use 1 1/2 cups of butterscotch chips and 1 cup of chocolate chips instead for more butterscotch flavor.
  • Can I Use Other Chex Cereals? Yes! Corn Chex or even Wheat Chex can work, but Rice Chex is popular for a lighter, crisp texture. I suggest using Rice Chex.
  • Can I use Natural Peanut Butter? I wouldn’t suggest using natural peanut butter as it doesn’t have the sugar and oils in creamy peanut butter. I suggest using a creamy peanut butter like Jif or Skippy’s.
  • Do I Need to Refrigerate Them? No. Let them set at room temperature. If your house is warm, refrigerating can help the chocolate topping firm up, but don’t store them long-term in the refrigerator, as they might become too hard.
  • What If I Prefer Dark Chocolate? Go ahead and use dark chocolate chips or a semi-sweet and dark chocolate blend. Just keep the butterscotch chips for that classic scotcheroos flavor.
