Chia Fresca
Description
This recipe combines water or coconut water with chia seeds, which are stirred and then left to soak to prevent clumping. The seeds absorb liquid and swell over about 10 minutes total, giving the drink a thicker, textured consistency. After soaking, honey is added to provide sweetness and fresh lemon juice contributes a crisp, tart flavor that balances the mild natural taste of chia.
Chia Fresca serves as a hydrating beverage with a subtle texture from the gelatinous seeds. It’s often enjoyed immediately but can be stored chilled for a few days.
Leftover drink should be kept in an airtight container in the refrigerator and will last up to three days while maintaining its texture and flavor.
Ingredients
- 24 ounces water or coconut water
- 2 tablespoons chia seeds
- 2 teaspoons honey
- 2 tablespoons lemon juice fresh
Instructions
- Divide the water and chia seeds into two cups. Stir well to avoid clumps, and set aside for 5 minutes.
- Stir again to loosen any clumps of chia seeds and set aside for 5 more minutes.
- After 5 minutes total, the chia seeds will plump up. Add the honey and lemon juice and stir one more time. Enjoy immediately or store in the fridge.
Notes
- Store any leftovers in an airtight container in the refrigerator for up to 3 days.
