Chia Jello
Description
Chia Jello combines chia seeds and juice to create a gelled pudding after an overnight chill. The seeds absorb liquid and swell, producing a smooth, spoonable texture that holds fruit toppings well. The preparation requires an initial thorough stirring to break up clumps and a resting period in the fridge to fully set the mixture. The flavor depends on the juice used, ranging from sweet to tart, with optional honey or other sweeteners enhancing the taste.
Served cold, this chia gel can be topped with fresh fruit that complements the chosen juice, adding natural sweetness and variety to the texture. It works as a light and refreshing dish suitable for breakfast or a healthy snack.
To maintain texture, stir well when mixing ingredients and allow several hours or overnight refrigeration to achieve full gel formation. Store leftovers in a covered container in the refrigerator for up to one week, and experiment with different juices and toppings for variety.
Ingredients
- 2 tablespoons chia seeds
- ⅓ cup juice of choice
- 1 teaspoon honey optional, or other sweetener
- Fruit for topping
Instructions
- Pour ingredients into a jar and mix well. Let settle for 2-3 minutes then mix again very well until you see no clumping.
- Cover the jar and store in fridge overnight or for at least 4 hours.
- When you're ready to eat it, top with your favorite fruit and enjoy cold!
Notes
- Stir the mixture thoroughly at first to prevent clumping for a consistent texture.
- Refrigerate the chia mixture for at least 4 hours, preferably overnight, to allow the seeds to fully gel.
- Store chia jello in an airtight container in the fridge for up to one week.
- Top with fresh fruit, coconut chips, cacao nibs, or chopped nuts to enhance flavor and texture.
- Choose any juice or sweetener to customize taste according to preference.
