Chia Pudding

A simple and nutritious recipe for Chia Pudding! We topped ours with Chopped Plums, toasted coconut flakes and bee pollen, but the possibilities are endless!

Ingredients

Servings
  • 1 cup coconut milk
  • ¼ cup chia seed white
  • 1 ½ tablespoons honey
  • ¼ teaspoon salt
  • pinch cinnamon optional

toppings:

  • 1 plum seeded and chopped
  • 3 tablespoons coconut unsweetened; shredded flakes
  • 1 1/2 tablespoons bee pollen

Instructions

  1. Place coconut milk, chia pudding, honey, and salt (and cinnamon, if using)in a jar and tightly seal. Shake until well combined. Place jar in the refrigerator and allow mixture to sit for about 12 hours, shaking occasionally.
  2. Stir pudding and scoop into serving bowls and top with toppings. Serve.
