Description
Chicken breast is sliced into thin cutlets, lightly seasoned with olive oil, salt, and pepper, then grilled over medium-high heat until cooked through. Resting the chicken after grilling retains juices. Whole wheat tortillas are briefly microwaved for softness and flexibility, preventing them from cracking when wrapped.
Each wrap is layered with green leaf lettuce, shredded Monterey Jack and cheddar cheeses, and sliced grilled chicken before being rolled tightly like a burrito. Folding techniques secure the filling and facilitate neat eating. This cool wrap provides a balance of protein, fresh greens, and mild cheeses with creamy dressing optionally served on the side or inside.
It serves as a convenient lunch or light dinner option, easily packed for on-the-go meals or casual eating. The grilled chicken contributes smoky flavor and satisfying texture, while the cheeses add richness without overwhelming the freshness of the lettuce.

Ingredients
- 1 lb. chicken breast about 2 large breasts (or sub for 12-oz. cooked grilled chicken, boneless
- 2 tsp olive oil
- 4 pieces green leaf lettuce
- 4 whole wheat tortillas or tortillas of choice (I used low carb)
- 1 cup Monterey jack cheese thick shredded
- 1 cup cheddar cheese thick shredded
- avocado lime ranch dressing optional for dipping (or you can use store bought or dressing of choice)
Instructions
- Preheat the grill to medium-high heat and grease the grill grates. I like using my Ninja Foodi indoor grill for this but an outdoor grill works perfectly fine too. You can also cook the chicken in a skillet or in the air fryer.
- Slice the 2 chicken breasts in half to make 4 cutlets. Pat the chicken dry with a paper towel and place in a bowl with the olive oil and salt and pepper to taste. Toss well to coat.
- Place the chicken cutlets on the grill, and grill for 2-3 minutes per side or until the internal temperature of the chicken is 155F (carry over cooking will ensure chicken reaches 165F).
- Remove from the grill and place on a cutting board or plate. Allow the chicken to rest for 5-10 minutes before slicing (this helps keep it juicy).
- Microwave the wraps for 10-15 seconds (so they are more pliable and less likely to break).
- Then add the lettuce, followed by cheese, and then sliced chicken (1/4 of everything to each wrap).
- Wrap like you’d wrap a burrito, then cut in half and serve with avocado lime ranch dressing or your dressing of choice.
- Store remaining wraps in the fridge in an airtight container for 4-5 days.

- To make gluten-free, use gluten-free tortillas or wraps.
- For a dairy-free version, substitute plant-based cheese alternatives.
- Wrap folding involves placing ingredients in the center, folding the short sides inward, then rolling up tightly to enclose the filling securely.
